1.1 Introduction
Food and beverage service technology refers to the application of modern tools, equipment, and digital systems used to prepare, manage, deliver, and improve food and beverage services within hospitality establishments. These technologies include electronic point-of-sale systems, online ordering platforms, kitchen management software, automated payment systems, and inventory control applications. According to Buhalis and Law (2008), technology has transformed hospitality operations by improving communication, service efficiency, and customer relationship management.
The hospitality industry depends greatly on effective food and beverage services because they contribute significantly to guest satisfaction and hotel revenue generation. Modern food and beverage technologies help hotels reduce operational errors, improve service speed, monitor stock levels, and provide better experiences for customers. According to Kansakar, Munir, and Shabani (2019), the adoption of technology in hospitality has increased efficiency by allowing organizations to manage services more accurately and respond quickly to customer needs.
As a prelude to other parts of this study, this chapter will discuss the background upon which this study was initiated, the statement of problems that led to this study, the aim and objectives of the study. Others are significance of the study, scope of work, research hypothesis and questions, limitation of the study and definition of terms.
1.2 Background of Study
The hospitality industry is one of the fastest-growing sectors globally, providing accommodation, food, beverage, and other related services to meet the needs of travelers, tourists, and local customers. Food and beverage service is a major component of hospitality operations because it contributes significantly to guest satisfaction, business profitability, and the overall image of hospitality establishments. According to Walker (2021), food and beverage services involve the preparation, presentation, and delivery of meals and drinks to customers in a manner that satisfies their expectations while maintaining quality and safety standards. The effectiveness of these services depends not only on the skills of employees but also on the availability and proper utilization of modern technologies that support daily operations.
The introduction of technology into hospitality has changed the way hotels manage their food and beverage activities. According to Buhalis and Law (2008), information technology has transformed tourism and hospitality operations by improving communication, service delivery, and decision-making processes. Technologies such as electronic point-of-sale systems, digital ordering platforms, automated billing systems, and inventory management software have become important tools for improving efficiency. Similarly, Koo, Gretzel, and Sigala (2015) reported that technology adoption in hospitality enhances customer interaction, reduces operational delays, and allows service providers to respond effectively to changing consumer demands. These developments have made technology an essential factor in maintaining competitiveness within the hospitality sector.
Food and beverage service technologies provide hotels with opportunities to improve accuracy, reduce waste, and increase customer satisfaction. According to Kasavana and Cahill (2017), computerized systems help hospitality organizations manage reservations, monitor sales, control inventory, and generate accurate financial records. In the same vein, Law, Buhalis, and Cobanoglu (2014) asserted that technological applications enable hospitality businesses to improve service quality by providing faster and more reliable services to customers. The use of these technologies also supports employees by reducing manual workload and improving coordination between different departments within hotel operations.
Furthermore, the growth of digital technology has created new expectations among customers who seek convenience, speed, and personalized services. According to Ivanov and Webster (2019), modern travelers increasingly value technology-driven services because they provide easier access to information, faster transactions, and improved service experiences. Moreover, customers expect hospitality establishments to integrate digital solutions into their operations, including online ordering, electronic payment options, and automated service processes. Supporting this position, Bilgihan and Bujisic (2015) stated that technology plays a significant role in shaping customer perceptions and influencing their satisfaction with hospitality services.
The Nigerian hospitality industry has gradually embraced technological innovations as hotels seek better ways to compete and improve operational performance. According to Adebayo and Adesina (2020), the adoption of digital technologies in Nigerian hotels has contributed to improved customer management, payment processes, and administrative efficiency. However, several hospitality establishments still face difficulties in achieving full technological integration due to limited resources, inconsistent infrastructure, and insufficient technical support. Along the same line, the effectiveness of food and beverage service technologies depends on how well hotels manage implementation, employee training, and continuous system improvement.
This study is set against the backdrop of the increasing importance of technology in improving hospitality operations and the need to evaluate its effectiveness within food and beverage services at Roban Hotels Enugu.
1.3 Statement of Problems
Investigation revealed that food and beverage service technologies have become important tools in improving service delivery, customer satisfaction, and operational efficiency in the hospitality industry. However, many hotels still experience challenges in adopting modern technologies due to high installation costs, inadequate technical knowledge, and limited maintenance support. On the other hand, some hospitality establishments continue to depend on traditional methods, which may affect productivity and the overall guest experience.
Additionally, food and beverage departments in hotels face difficulties such as delays in order processing, poor inventory control, inaccurate billing systems, and challenges in maintaining service quality. These issues are often linked to inadequate integration of digital technologies such as point-of-sale systems, automated ordering systems, and electronic management platforms.
Furthermore, Roban Hotels Enugu, like many hospitality organizations, requires effective food and beverage service technologies to enhance operational performance and customer satisfaction. However, limited understanding of the benefits, challenges, and level of application of these technologies creates a need for critical examination. It is against this backdrop that this study seeks to examine the food and beverage service technologies used in hospitality, with particular reference to Roban Hotels Enugu.
1.4 Aim and Objectives of Study
The aim of this study is to critically examine the food and beverage service technologies in hospitality, using Roban Hotels Enugu as a case study.
The specific objectives of the study are to:
- Identify the types of food and beverage service technologies used in Roban Hotels Enugu.
- Examine the influence of food and beverage service technologies on service delivery efficiency.
- Determine the challenges affecting the effective use of food and beverage service technologies in Roban Hotels Enugu.
- Assess the level of staff knowledge and training on the use of food and beverage service technologies.
- Examine ways of improving the application of food and beverage service technologies in hospitality operations.
1.5 Research Questions
The study came up with research questions so as to be able to ascertain the above stated objectives. The following research questions guide the study:
- What types of food and beverage service technologies are used in Roban Hotels Enugu?
- How do food and beverage service technologies influence service delivery efficiency in Roban Hotels Enugu?
- What challenges affect the effective use of food and beverage service technologies in Roban Hotels Enugu?
- What is the level of staff knowledge and training on the use of food and beverage service technologies?
- What measures can improve the application of food and beverage service technologies in hospitality operations?
1.6 Research Hypotheses
In order to pursue the objective of this study, the following generalized statements have been designed to guide and aids in obtaining the result for the experiment to be conducted. For this work, the null hypothesis will be represented with H0 while the alternative hypothesis will be represented with hypothesis H1.
Hypothesis One
- H0: Food and beverage service technologies have no significant influence on service delivery efficiency in Roban Hotels Enugu.
- H1: Food and beverage service technologies have a significant influence on service delivery efficiency in Roban Hotels Enugu.
Hypothesis Two
- H0: Staff knowledge and training do not significantly affect the effective use of food and beverage service technologies in Roban Hotels Enugu.
- H1: Staff knowledge and training significantly affect the effective use of food and beverage service technologies in Roban Hotels Enugu.
1.7 Significance of Study
It is believed that at the completion of the study, the findings will provide useful information to Roban Hotels Enugu management on the importance of adopting and improving food and beverage service technologies for better operational performance. The study will also help employees understand the importance of technology training in improving accuracy, speed, and quality of service delivery.
Furthermore, the study will support better customer experiences through improved food and beverage services, faster transactions, and efficient service processes. It will also provide learning materials on the application of technology in food and beverage operations.
Lastly, the study will serve as a reference material for students and researchers interested in hospitality technology and service management.
1.8 Scope of Study
This study focuses on a critical examination of food and beverage service technologies in the hospitality industry, with specific reference to Roban Hotels Enugu, Enugu State, Nigeria. The study covers the types of technologies used, their influence on service delivery, challenges affecting their application, staff training, and possible improvements in food and beverage operations.
1.9 Limitations of the Study
During the course of this study, there were some problems encountered which stood as limitations to the research work. Some of the limitations include:
- Time Constraint: The time frame given to accomplish this project was very short due to school academic calendar and it was carried out under pressure which made the researcher not to implement some necessary features.
- Financial Constraint: Insufficient fund tends to impede the efficiency of the researcher in sourcing for the relevant materials, literature or information and in the process of data collection (internet, questionnaire and interview).
- Initial Cooperation Delay from Respondents: A particular limitation of this work came as a result of the respondent refusal to offer their cooperation at the initial time they were contacted. This contributed in making the success of this research study difficult.
