    ABSTRACT

    This study evaluated the consumption quality of soybean Ogiri manufactured using fermented melon seed isolate, focusing on sensory attributes, nutritional composition, and microbial load. Sensory evaluation revealed that the soybean Ogiri with melon seed isolate scored highly in taste (8.2 ± 0.4), aroma (7.9 ± 0.3), texture (8.0 ± 0.5), appearance (7.8 ± 0.4), and overall acceptability (8.1 ± 0.3), indicating favorable consumer preference. Nutritional analysis showed a significant increase in protein content (32.4 ± 0.6%) compared to traditional Ogiri, with balanced levels of moisture (12.5 ± 0.2%), fat (10.3 ± 0.3%), and ash (4.5 ± 0.1%), highlighting its enhanced nutritive value. Microbial assessment confirmed acceptable microbial loads within safety limits, with total viable counts averaging 4.2 × 104 CFU/g, and absence of pathogenic bacteria, reflecting good hygienic processing. Comparative analysis demonstrated that the Ogiri produced with fermented melon seed isolate had superior sensory and nutritional qualities compared to traditional Ogiri samples, suggesting that the incorporation of fermented melon seed isolate improves both consumption quality and safety of soybean Ogiri. Based on the findings of this research, it was recommended that food producers should consider incorporating fermented melon seed isolate into soybean Ogiri to enhance its nutritional value and improve sensory qualities, thereby increasing consumer acceptance. Furthermore, policy makers and nutritionists should promote awareness about the benefits of fortified traditional foods like Ogiri to encourage healthier dietary practices in communities.

    1.0 Introduction

    1.1 Background of Study

    The use of fermented melon seed isolate a protein-rich derivative of fermented melon seed as a fermentation starter or additive introduces the possibility of standardizing the fermentation process in Ogiri production. Such a strategy can enhance product consistency, improve sensory characteristics, and ensure microbial safety (Achi, 2005). Combining soybean and fermented melon seed isolate not only utilizes locally available raw materials but also promotes innovation in traditional food processing methods. Soybean is widely recognized as a rich source of protein and nutrients, yet its use in the production of Ogiri is not fully explored or optimized. The incorporation of fermented melon seed isolate into soybean Ogiri is promising, as it is intended to improve fermentation quality and nutritional value, but there is little scientific data on how this combination affects the overall consumption quality of the product. Without adequate evaluation, the safety, sensory attributes, and nutritional benefits of soybean Ogiri produced this way remain uncertain.

    Ogiri is a traditional African fermented condiment produced mainly from melon seeds (Citrullus vulgaris), and widely used to enhance the flavor of local dishes such as soups and sauces. It is known for its strong aroma and characteristic taste, which are results of microbial fermentation. Traditionally, Ogiri is produced through spontaneous fermentation by wrapping melon seeds in leaves and allowing them to ferment for several days. Traditional African condiments such as Ogiri play an important role in enhancing the flavor and palatability of indigenous dishes. Ogiri is a fermented food product typically derived from melon seeds and is widely consumed in Nigeria and other West African countries. It is characterized by its strong aroma and rich umami flavor, which result from natural fermentation processes involving lactic acid bacteria and other microorganisms (Odunfa, 1985). However, the traditional method of producing Ogiri is often carried out under unhygienic conditions, leading to inconsistencies in quality, short shelf life, and potential health hazards due to contamination.

    In recent years, alternative protein sources such as soybean (Glycine max) have gained interest in food formulation due to their high nutritional profile and functional properties. Soybeans contain approximately 40% protein and are rich in essential amino acids, making them a viable alternative or supplement to melon seeds in condiment production (Ihekoronye & Ngoddy, 1985). When fermented, soybeans also produce bioactive compounds that contribute to flavor and health benefits, similar to those derived from traditional condiments.

    The innovation of incorporating fermented melon seed isolate in soybean Ogiri production is a relatively recent development aimed at combining the traditional and modern fermentation knowledge. The isolate serves as a natural fermentation starter, potentially improving fermentation efficiency, microbial safety, and sensory qualities (Achi, 2005). Fermented melon seed isolate, a protein-rich fraction obtained from fermented melon seeds, has been proposed as a potential fermentation starter or supplement in the production of Ogiri. Incorporating fermented melon seed isolate into soybean-based Ogiri could improve fermentation consistency, enhance organoleptic properties (taste, aroma, texture), and boost the nutritional content of the condiment. Therefore, this study seeks to bridge this gap by evaluating the consumption quality of Ogiri manufactured from soybean, using fermented melon seed isolate as a fermentation enhancer.


    1.2 Statement of Problems

    Investigation revealed that many producers still rely on traditional, empirical methods rather than controlled fermentation techniques that could enhance product consistency and safety. The production and consumption of Ogiri, a traditional fermented condiment, is deeply rooted in many West African communities, but its traditional preparation methods are often inconsistent and unhygienic (Achi, 2005).

    Furthermore, the spontaneous fermentation process is not standardized, resulting in uneven taste, aroma, and texture, which affects consumer acceptance and marketability. Hence, it is against this backdrop that this study aims to investigate how the use of fermented melon seed isolate influences the microbial safety, sensory qualities, and nutritional content of soybean Ogiri to provide evidence-based recommendations for producers and consumers.


    1.3 Aim and Objectives of Study

    The aim of this study is to evaluate the consumption quality of soybean Ogiri manufactured using fermented melon seed isolate. In achieving this aim, the following specific objectives were laid out as follows:

    1. To produce soybean Ogiri using fermented melon seed isolate as a fermentation starter.
    2. To assess the sensory attributes (taste, aroma, texture, and appearance) of the soybean Ogiri produced.
    3. To analyze the microbial load and safety of the soybean Ogiri to ensure it meets acceptable standards.
    4. To determine the nutritional composition of the soybean Ogiri including protein, fat, and mineral content.
    5. To compare the consumption quality of soybean Ogiri with that of traditionally produced melon seed Ogiri.

    1.4 Research Questions

    The study came up with research questions so as to be able to ascertain the above stated objectives. The specific research questions for the study are stated below as follows:

    • How is soybean Ogiri produced using fermented melon seed isolate as a fermentation starter?
    • What are the sensory characteristics (taste, aroma, texture, and appearance) of the soybean Ogiri manufactured with fermented melon seed isolate?
    • What is the microbial load of the soybean Ogiri produced with fermented melon seed isolate, and does it meet acceptable safety standards?
    • What is the nutritional composition of soybean Ogiri produced with fermented melon seed isolate in terms of protein, fat, and mineral content?
    • How does the consumption quality of soybean Ogiri compare to traditionally produced melon seed Ogiri?

    1.5 Significance of Study

    The outcome of this research will contribute to improving the safety and nutritional quality of traditional fermented condiments by exploring the use of soybean combined with fermented melon seed isolate. The findings will also help in standardizing fermentation processes, which will lead to more consistent product quality and reduce the risk of contamination.

    Additionally, this study will support local economies by encouraging the use of affordable and locally sourced raw materials, thus promoting sustainable food production practices. It will also aid policymakers and regulatory bodies in developing guidelines that ensure the safety and quality of fermented food products in the market.

    Furthermore, consumers will benefit from the study as it will promote the availability of a safer and more nutritious alternative to traditional Ogiri, potentially improving dietary protein intake and overall health.


    1.6 Scope of Study

    The scope of the research is focused on evaluating the consumption quality of soybean ogiri manufactured with fermented melon seed isolate.


    1.7 Limitations of the Study

    A study of this nature is bound to experience certain problems as such the constraints imposed on the research include:

    1. Time Constraints: A study of this nature needs relatively long time during which information for accurate or at least near accurate inference could be drawn. The period of the study was short, time posed as constraints to the research.
    2. Financial Constraints: The research would have extended the survey to other area at the empirical level, but limitation as included cost of transportation to the source of material and the cost of time setting of the already completed work.

    1.8 Definition of Terms

    Ogiri: Ogiri is a traditional West African fermented condiment, commonly made from oil seeds such as melon seeds, castor seeds, or locust beans. It is widely used to enhance the flavor of soups and stews and is known for its strong aroma and rich nutritional profile (Achi, 2005).

    Soybean: Soybean (Glycine max) is a leguminous crop valued for its high protein content and nutritional benefits. It is increasingly used in food processing as a substitute or supplement for traditional ingredients due to its health-promoting properties (Messina, 1999).

    Fermentation: Fermentation is a natural biochemical process where microorganisms like bacteria and fungi break down complex compounds in food, resulting in desirable changes such as improved flavor, preservation, and enhanced nutritional value (Tamang et al., 2016).

    Melon Seed Isolate: Melon seed isolate refers to a concentrated extract obtained from fermented melon seeds, containing beneficial microorganisms and enzymes that can be used as a starter culture to initiate and control the fermentation process (Adeleke & Odedeji, 2010).
